Nadia Ahissou

Nadia’s love for French baking began in her childhood in Benin, West Africa, where sharing warm croissants with family became one of her sweetest memories. During Covid‑19, that early passion resurfaced, and as a devoted breakfast lover she began baking each morning—treating loved ones to handmade pastries crafted with fresh ingredients and traditional techniques. Their joy and encouragement sparked the beginning of Nadia’s French Bakery.

Inspired by the elegance of French pastry, Nadia trained through online courses in Paris, refining the precision and artistry that shape her work today. She now brings the enchantment of French baking to Des Moines through croissants made with exclusive, high‑quality ingredients and meticulous French techniques. Customers often say her pastries taste just like the ones they fell in love with in Paris, a little bite of France, made with love right here at home.

What a delightful experience. I was quite stressed when walking in. The food, the music, the entire vibe calmed my soul. I had the ham/swiss crossiant with the seas salt almond choc chip cookie. Both were divine.

Fantastic Boulangerie. ❤️ I loved the options. Everything tasted amazing. It felt like I was right back in Paris. The Chausson aux pommes (appleflaps) were perfection. The Pain au Chocolat were equally as delicious! I will 100% be back with friends. The only downside is how much it makes me miss my time in France.

Best croissant I’ve had in a while! Super airy, chewy and soft. The beignets are in the traditional donut shape and I can say the same about the taste and texture too. Have to say this is my new favorite place!

This is my second time back at Nadia’s and I’ll definitely be coming back. Their pastries are phenomenal. So buttery and flaky. I love supporting small local businesses too. The croissants have great lamination, the pastry cream is smooth, the bread for the ham sandwich was so good. Honestly 10/10 on the pastries we’ve tried. My only small complaint is the coffee takes a while to get, maybe that’s on me because I want to inhale my croissant as soon as I get it and enjoy a coffee with it. Also the coffee can be a bit strong for some.

WOW!!! We are completely blown away by the flawless execution of these pastries by Nadia and her team! The Pistachio Torsade was absolutely divine! We also got the viral cookie croissant which was perfectly chocolatey, just the right balance of sweet and savory, crunchy on the outside, chewy on the inside, flakey, and buttery, all the right things! I will not be able to paint a good enough picture of how amazing everything tasted! You’ll just have to go!

One of my coworkers ordered this for everyone at the office. Eveything was so delicious! The sweet pastries had great flavors and weren’t overly sweet. I will definitely be visiting this place for myself as a treat!
